Boston Cream (Cup)Pies!

My friend, M, LOVES these Boston Cream Pie cupcakes from a nearby bakery and she was kind enough to share some with me the other day. They were soooooo fantastic, I became stuck on trying to re-create them again. There wasn't too many mishaps along the way. M actually said she likes mine more! WIN!

I signed up for a cupcake decorating class at a nearby bakery! It wasn't anything I didn't already know, but it was nice just learning from an actual person instead of a web page for once! (: I think they came out super cute!

Lemon Cupcakes with Swiss Buttercream Frosting

Going crazy with cupcakes lately especially because I have been adoring this recipe I found for Swiss Buttercream frosting. It has the same richness of buttercream but without the heaviness. I still overbeat a lot of the time, but it's worth it for all the decorating you can do with it. I tried something different with the pictures this time. I don't like how it turned up but I don't know what I did with the originals. Ohhhh well!

"Don't Chai To Resist" and Milk Chocolate Cupcakes

I tried to start off the new year by adjusting my sleeping schedule so that I would wake up at 6. My hopes is that I would end up being more productive waking up so early, and so far I have been right! School didn't start yet so I had to fill my time with something...(: The Chai cupcakes came out really great. The flavor wasn't as weak as I thought it might've been cause I didn't have a lot of Chai tea to use. I am really proud of these because of the chocolate designs I did. They were really last minute touches so I'm relieved they came out well. Hopefully they go over well with the staff at the Multicultural Center, where I am now accepted back into as an intern! :D I'm so incredibly excited. Happy New Year Everyone! Nutella Buttercream Cupcakes

I bought a HUGE jar of Nutella, which is more than I definitely know what to do with so I tried to use it in a cupcake recipe. The cake itself is a box cake, but I spaced out for a bit and mixed it for longer than it said by 1-2 miinutes and the batter turned out a-mayyy-zing~! It tasted like I made it from scratch, fluffy and moist. I have tried making a buttercream frosting but it has never turned out this good before. I added a lot more cream than the recipe called for and it made the texture a lot lighter. I ended up putting way too much nutella because I made the Boyface taste it instead. All in all, definitely an easy and solid cupcake. Everyone enjoyed it a lot. Nutella Cupcakes Yellow cupcake topped with a Nutella buttercream.

The Execution: Lemon Meringue Cupcakes

I made them and they took foreverrrrr. They turned out pretty nicely and they tasted great. I didn't do the sugar designs like I wanted to, choosing instead to put coconut because I figured it would look better. I also added a 1/3 cup of coconut to the batter. The lemon filling I think is a must just because that's where the kick of lemon comes in. Definitely a good cupcake, but time consuming. D:

The Preparation!: Lemon Meringue Cupcakes

So the Boyface's birthday is tomorrow and I wanted to make something he would enjoy and share with people in celebration of it. I had three flavors he liked in mind for cupcakes (1) oreo (2) peanut butter cup and (3) lemon. I decided on the lemon because I rarely if ever make anything that is citrusy. The desserts I make always end up with an element of chocolate. :P So I am using the book  Cupcakes  by Shelly Kaldunski for the different components of this cupcake and a website recipe.  Lemon Cupcakes Bake for 18-20 minutes @ 350 degrees F 1 cup all-purpose flour 1 tsp baking powder 1/4 teaspoon salt 3/4 cup sugar 1/2 cup + 2 tablespoon room temp. unsalted better 2 room temp. large eggs 1 tsp freshly grated lemon zest 1/2 tsp  lemon extract 1/4 cup sour cream Whisk together flour, baking powder, and salt In separate bowl: beat sugar and butter together with electric mixer (2-3 minutes) Add eggs, lemon zest, and lemon extract, and beat until combined A...
